Recipe of the Month:  Roasted Asparagus with Rhubarb Vinegar

Serves 4-6
Ingredients:
2 bunches of fresh asparagus, trimmed
2 tablespoons of extra virgin olive oil
Kosher Salt and Black Pepper for seasoning
3 stalks of rhubarb stalks, roughly chopped
1 small shallot, sliced
½ cup of white balsamic vinegar

Directions:
Preheat oven to 400 degrees F
Arrange asparagus on a backing sheet and drizzle with 1 tablespoon of olive oil (you may have to roll the talks around to coat evenly). Season with salt and pepper. Roast in oven, turning several times, for 15-20 minutes or until the tips are browned and crisp. While asparagus are cooking, heat a saucepan over medium heat. Add 1 tablespoon of olive oil and then add shallots and cook until softened, about 3-4 minutes. Add rhubarb and cook an additional 2-3 minutes. Stir in the vinegar and simmer until the rhubarb is soft but not mushy, 10-12 minutes. Strain the mixture into a small saucepan. Bring the mixture to a simmer over medium-low until thick and syrupy, about 5 minutes.

To serve, arrange the asparagus on a large platter, drizzle with the rhubarb vinegar and season with salt and pepper to taste.

Dr. Schmidt tip: Make a double serving to have as a side for your lunch the next day. This is an easy way to get an extra servings of veggies. I’ll even eat leftover asparagus with a poached egg the next day for breakfast! Yum.
Health fact: Asparagus is loaded with good stuff like vitamin K and B vitamins. It is a natural anti-inflammatory and is a great source of fiber.
Fun fact: The redder the rhubarb stalk, the sweeter it is! And while the stalks are sour and delicious, rhubarb leaves are actually poisonous and can damage the kidneys so stay away from them!
