Recipe of the Month:
Watermelon and Cucumber Salad
Serves 4-6
Ingredients:
6 c. diced watermelon
3 Persian cucumbers
3 tablespoons of extra virgin olive oil
3 tablespoons of red wine vinegar
1 tsp sea salt
¼ cup of crumbled feta
¼ cup of mint leaves
Directions:
Combine watermelon, cucumbers, olive oil, red wine vinegar, and sea salt. Roughly chop mint leaves, add crumbled feta, and toss. Divide between salad plates and serve.
Dr. Schmidt tip: For more of an herb punch try adding basil to the recipe! I think this pairs perfectly in the summer with grilled chicken.
Health fact: Watermelon is RICH in an antioxidant called Lycopene which supports heart and neurological health and also helps prevent certain types of cancer!
Fun fact: Most would guess watermelon is a fruit, however, it is actually a vegetable belonging to the same family as pumpkins, squash, and cucumber ( the Curcubit Family).
