Recipe of the Month: Cucumber Yogurt Salad

Serves 4 ∞ Prep time 15 minutes.
Approximately:  Kcals 126 kcal

Ingredients for salad:

4 large cucumbers
½ red onion
1/4 cup of fresh dill
¾ cup of plain Greek Yogurt or Icelandic Skyr Yogurt
2 TBSP of olive oil
2 tsp of white wine vinegar (don’t have any? Use fresh lemon juice instead).
Salt and pepper for taste

 

Directions:
Combine yogurt, olive oil, vinegar, and dill and let set for 10 minutes
Cut cucumber and red onion
Combine cucumber, onion, and dressing, mix well.
Top with salt and pepper to taste

Dr. Schmidt tip: I always grew up peeling the skin off cucumber—try leaving the skin on! The skin of a cucumber is full of fiber and nutrients.
Health fact: Greek or Icelandic Yogurt is rich with probiotic cultures which is great for overall health!
Fun fact: According to thetowndish.com: The term “cool as a cucumber” is actually derived from the cucumber’s ability to cool the temperature of the blood. Also when applied topically, cucumber really does cool the blood and eases facial swelling, which is why cucumbers are so popular in facial regimens.
